I am a big fan of using simple methods to introduce goal orientation throughout the project. I like to use the OKR method for this, as well as target hierarchies and simple key figures.
Of course, I also provide support in getting a grip on the big issue of project planning, whether without a tool or with Jira or MS Project. After years of experience in project management, I have come to realize that textbook planning is well-intentioned, but it's the feasibility that counts. Project planning must be designed in such a way that it can be worked with and it must be results-oriented.
